Quick Spinach & Egg Air Fryer Taco

Directions:

  1. Preheat the air fryer to 370ºF (190ºC).

  2. Heat a large nonstick pan over medium heat. Add half of the oil and the spinach. Cook for about one minute until wilted.

  3. Reduce the heat to low, then add the eggs. Season with salt and pepper. Scramble and cook for 4-5 minutes, or until fully cooked. Remove from heat and set aside.

  4. Place a tortilla on a flat surface and sprinkle cheese on half of the tortilla. Add the egg mixture on top of the cheese, then fold the tortilla in half, gently pressing it down. Drizzle the remaining oil over the folded tortilla.

  5. Transfer the tortilla to the air fryer and bake for 3 minutes. Flip it and cook for another 3 minutes or until golden and crispy.
